Since my last smoothie post, I may have gone a little smoothie-crazy. It started with being given a Vitamix, and, well... let's just say it doesn't leave the kitchen bench. Ever. And only I clean it and basically touch it. Other people have babies or puppies or cats, but me? I dote on my beautiful red Vitamix.
Since getting it, my diet has changed in loads of ways, but the biggest changes have been at breakfast time. The arrival of the Vitamix coincided with my decision to cut out bread, pasta and other gluten-containing foods, for the most part, from my diet. So I've gone from eating toast with Marmite for breakfast every day to drinking one of these vegetable-filled smoothies, and I am loving the benefits.
But just so we're clear... toast with Marmite is still and always will be my favourite thing in the world. I think Kiwis and Brits will understand my feelings on that topic. I avoid gluten as an 80/20 type thing, because there are some things I just enjoy too much... like cold beer. And pizza. And Marmite on toast.
We've got about two handfuls of spinach, 1/4 of a carrot, 1/4 of a cucumber, half a green apple, half a large zucchini (or one small one), 1/2 a frozen banana, a small handful of frozen blueberries, a frozen mint cube (water and mint frozen in ice trays, then popped into a sandwich bag and stored in the freezer), and 1 tsp chia seeds and 1 tsp flax seeds.
I sometimes include a sprinkling of oats, or a cube of fresh ginger, and then blend with 2-3 cups of oat milk, almond milk, rice milk, or water and a decent handful of ice cubes.
